Gluten May Not Be the Ingredient in Wheat That's Making You Sick

"Gluten-free", "gluten" here, "gluten" there, "gluten" everywhere.  Surprise, surprise -- that is not what the science says is the problem (if there really is an issue).

Here is a pretty good story on some of the latest gluten science.

The other thing to keep in mind is that the foods at issue (more than just wheat) are generally very healthy foods.  We need to consider why some may be having problems with certain compounds in these healthy foods.  The microbiome -- the bacteria in our gut, for good or for bad -- needs to be flashing a big red light on our radar as a likely issue in how we process normal food compounds.
